What Goes Up Must Come Down
Last week I shared with all
of my excitement about the Great Hike of 2010, my very
first hike and excited and
exhilarated
when I got to the top. What I did not mention was all
the way up, Kevin kept reminding me “remember, you still
have to come back down.” Having no history as a
hiker, I did not take his message as seriously as I should
have.
To me, going down seemed like it would be the easy part.
WRONG…
Started off great and still had good energy. We had taken
a rest at the top, took photos, had some water and ate an
apple. I was already estimating in my mind that since it
took 2.5 hours to get up, we would be down in 1.5 hours easy.
Hiking uphill, my feet naturally went back into my shoes.
Going down, my feet went forward and pretty soon my toes
starting getting numb (the good part, just did not know it
at the time.) Breathing and legs seemed to be ok, but the
more we hiked, the more pain my toes seemed to be in. After
about the first hour I was already trying to figure out how
I could get a helicopter to come in and do an air lift out.

At one point, the pain in my toes was almost making me cry
with every step and they had progressed from numb to feeling
like raw meat being pounded. And after what seemed like forever
we were only about half way down. At that point I sat down
and was wondering how much worse the rocks would feel if
I was barefoot than my toes were being smashed into my hiking
boots. At that point, my BFF Susan insisted I trade shoes
with her. The tough I can stick it out Judi was resistant
and thank you Susan for being more insistent than I had the
energy to be resistant.
Susan’s hiking shoes were ½ sizes
larger than mine and the next hour or so would have been
impossible
had
we not traded shoes. For all I know, I could still be
sitting on that trail at the half way point. I learned
a valuable
lesson about how important the right equipment is and
knowing what your limits are.
I did make it to the bottom obviously, was completely wiped
out and was asleep by 8 that evening with a giant blister
on the bottom of one toe. However, I learned that I (and
everyone else) is capable of more than we imagine. When we
push ourselves out of our comfort zone we learn new and amazing
things about ourself.
Our next big hike is in September when we have a trip planned
to June Lake in the Eastern Sierras. I plan on having bigger
shoes, packing more water and working on walking and increasing
my endurance in the meantime. It is great to discover what
you can do, when you set an intention.
In creating a healthy life, make sure you have all of the
equipment and tools and test your limits.

Ladder – Tier
1: Boysenberries
In
the late 1920’s
George Darrow of the USDA and Walter
Knott, a California berry farmer tracked down some
plants
from the failed farm of Rudolph Boysen. Finding a
few frail
plants they nursed them back to health. This was
the start of the
popular Boysenberries that were initially sold at
Knott’s
Berry
Farm in California.
The fresh season
for Boysenberries is typically July 2nd through July
25th.
Sinsce we are in early August you might sill find some
at your local farmers market. Boysenberries are on
the large side size (8.0 g) and are deep reddish-purple.
Health Benefits
Boysenberries are high in Vitamin C and fiber, both of
which have been shown to help reduce the risks of certain
cancers. They contain high levels of anthocyanins (120-160
mg/ 100g).
Anthocyanins work as antioxidants to help fight free
radical damage in
the body, and give boysenberries their deep, dark color.
Antioxidant levels of food can be measured as ORAC (Oxygen
Radical Absorption Capacity). The ORAC value of Boysenberries
is 42 µmoles/TE/g almost double that of blueberries,
another well-known antioxidant.
Boysenberries also contain ellagic acid, a phenolic compound
known as a potent anticarcinogen, anti-viral and anti-bacterial.
The ellagic acid level in boysenberries is 5.98 mg/g
of dry weight.
In addition, boysenberries have a uniquely high ratio
of free ellagic acid to total ellagitannins that is thought
to
make
the ellagic acid more readily available to the body.

Shakeology® Certified Low
Glycemic
You know about the awesomeness of Shakeology® – the ultra-premium
health shake which my wife helped formulate when she saw that her husband couldn't
eat
a vegetable unless it was deep fried.
Now, in addition to enjoying it daily, we all get to brag
about its most excellent score on the Glycemic Index Scale!
Shakeology® was recently
tested and measured for it Glycemic Index (GI) and received
the amazing score of 24
by Glycemic Index Laboratories.GI is a way to measure how
carbohydrates react in your blood. When you eat carbs, your
blood sugar level rises anywhere from a little to a lot.
The GI uses a scale of 1 to 100, with higher numbers given
to foods that cause the most rapid rise in blood sugar. These
foods give a quick energy boost, often followed by a crash
as your blood sugar drops rapidly, leaving you feeling sluggish,
tired and even irritated.

The body needs carbs for fuel, but you need to feed it the right kind of carbs
- ideally, foods found with a low rating on the Glycemic Index. Included
on this list are whole grains, nuts, fruits, vegetables and, now confirmed...
Shakeology.
Foods with a GI score of 55 or less are considered low on
the Glycemic Index.
That’s why our
rating of 24 on the Glycemic Index is so impressive.
We are considered very low on the Index - lower, in fact
than most fruits, some
vegetables and virtually every processed food ever made. It’s even
lower on the GI than an apple!
I get
questions all the time about the sugar content in Shakeology – especially
the fructose. Don’t confuse this with high-fructose corn syrup, which
is a sugar substitute used in many processed foods and soft drinks. Fructose
is a natural sugar found in fruits and some vegetables and is very low
on the GI. We source natural non-GMO fructose to give Shakeology its great
taste and
also make its nutrition more bio-available (don't be impressed, I learned
that word from my wife).
Did I mention that Shakeology low
GI score means it’s also okay for diabetics?

Boysenberry
Pancakes in
the Raw
These pancakes are the real deal. They have a maple-pecan
flavor and the fluffy texture of real pancakes. Since
they’re dehydrated ahead of time, keep some on
hand for a quick breakfast or dinner. Makes about 20
pancakes.

Ingredients:
2 cups pecans, soaked for 8 hours
2 cups pine nuts
2 ripe bananas
1 cup agave nectar
Seeds from 2 vanilla beans
1 teaspoon sea salt
2 cups boysenberries, muddled
Directions:
1. Put the soaked pecans, the pine nuts, bananas, agave
nectar, vanilla seeds, salt, and 1 Tablespoon of water
as needed if batter is too thick to blend, in a Vita-Mix.
While the machine is running, carefully remove the lid,
and using a rubber spatula, stir the mixture along to make
sure it is continuously turning over. Blend until smooth.
Using a spatula, fold in the muddled boysenberries.
2. With a ladle, drop ¼ -cup measures of the batter
onto Teflex-line dehydrator racks, leaving at least ½ inch
between the pancakes. They should be thick like pancakes,
about ½ inch thick, not thin like crêpes.
Dehydrate for 8 hours. Flip the pancakes onto clean Teflex
sheets and dehydrate for 8 more hours. These should be
soft and fluffy and have the consistency of a pancake.
Don’t dehydrate them for too long; they shouldn’t
be hard.
3. Cover and refrigerate for up to 3 days. Garnish with
boysenberries and coconut cream.
