Welcome to the first Summit Special Edition of Helping Reshape
the World. Summit is the annual conference where Team Beachbody
Coaches come together from all over the country to meet,
share and learn. The Summit has a two fold meaning for me
this year and I would like to share why.
I became a Beachbody Coach on December 16th, 2006. From
the first minute of the Founders Meeting when Team BeachBody
was being launched, I knew this was what I had been looking
for my whole life.
The event this weekend
in Los Angeles is for me a celebration of my personal
climb up out of the valley to the Summit over
the past year. At this time last year, I owned three
businesses; Beachbody and two others. As much as I would
like to
believe I am superwoman and can do anything, excellence
requires focus and my
focus was split.
Setting a goal is
easy. We decide what we want and then it’s our
goal, right? Well, yes and no. Setting a goal without
understanding
the price we need to pay
to reach the
goal is meaningless. To make changes happen, we have
to change. I did not attend the Summit last year and
backed out the
last day. I was too embarrassed to attend because I had
not lost any weight over the past year. Fearing people
would
judge me, I got scared and stayed home and have regretted
it every day since. I knew I had to make a decision on
the direction
my life would take over the next year.
Sometimes the price we have to pay to reach our goals can
be high. I had to really look at what my price was and if
I was willing to pay it. The cost of not reaching my goal
could be my life because of all my excess weight. And that
was not an option for me.
Going into Summit
this year, I will be a full time Beachbody Coach and
am thrilled and scared.
Got Great Wine was a business I had owned for over five
years and loved it. Leading a team of over 500 wine consultants
took a lot of time and dedication and I knew it was not
my
true purpose in life. When I got my monthly check this
past Friday and it was $32.03 I knew I was no longer
in the wine
business.
As of April 26th,
I am no longer the owner of Team Women. Team
Women has been a passion of mine for over
five years and this was a very high price for me to pay.
However, to live on purpose I felt the need to focus
on my personal health and helping others lose weight
and get healthy
through my Beachbody Coaching full time. Team Women has
a great new owner now who will bring new resources to
the wonderful
women who come together using networking as the most
powerful tool to build their businesses.
One of my original
goals when I became a Beachbody Coach was to fit into
my wedding gown again. Today I have been
married 29 years and while it does not fit today; I plan
on wearing it on April 26, 2011 (maybe even all day!)
So the Summit this weekend is truly a personal summit for
me as well. I have identified the price, have put all the
pieces in place to pay them and have my eyes set on success
and the top of the next summit both for myself and next year
for Beachbody. I would love to have you join me.
Kevin and I will be at Summit from Thurs until Sunday this
weekend. That is why we have done the Special Summit Edition
of our newsletter to cover both last week and this coming

Pineapple
Pineapple is one of those foods that is heaven to eat. A
good, juicy ripe pineapple can satisfy a sweet craving as
well as any chocolate bar. In addition to being a delicious
food, there are many health benefits of pineapple.
Pineapple is Loaded with Vitamins and Minerals
The obvious benefits of pineapple are all the vitamins and
minerals the fruit is loaded with. Its nutrients include
calcium, potassium, fiber, and vitamin C. In addition it
is low in fat and cholesterol.
The benefits of pineapple can be achieved through eating
fresh, canned, or frozen pineapple or by drinking its juice.
Pineapple Strengthens Bones
One of the benefits of pineapple is that it helps to build
healthy bones. Pineapples are rich in manganese, a trace
mineral that is needed for your body to build bone and connective
tissues. Just one cup of pineapple provides 73% of the daily
recommended amount of manganese. The benefits of pineapple
can effect the growth of bones in young people and the strengthening
of bones in older people.
Pineapple is Good for Colds and Coughs
While many people often take extra vitamin C or drink extra
orange juice when they have a cold, few consider eating
pineapple. The benefits of pineapple when you have a cold
or cough are the same as the benefits of orange juice,
but there is an additional benefit of pineapple. Bromelain,
which is found in pineapples, has been found to help suppress
coughs and loosen mucus.

Join us to launch
the new Team Beachbody Offices in Vista, CA. May is the
beginning of a whole
new era for my Beachbody
Business, Helping Reshape the World and we are having a
party to celebrate and you’re invited.
From 4 PM to 8 PM, several of the local San Diego Coaches
and I will be hosting a Team Beachbody Grand Opening Celebration

Pineapple Tofu Stir-Fry
From EatingWell
2 servings, 1 1/2 cups each
Active Time: 35 minutes
Total Time: 35 minutes
Nutrition Profile:

Ingredients:
- 1 - 8-ounce
can pineapple chunks or tidbits, 3 tablespoons juice
reserved ( I would use fresh)
- 5 teaspoons rice
vinegar
- 1 tablespoon reduced-sodium
soy sauce
- 1 tablespoon ketchup
- 2
teaspoons brown sugar
- 7 ounces extra-firm,
water-packed tofu, drained, rinsed and cut into 1/2-inch
cubes (See
Tip for
Two)
- 1 teaspoon cornstarch
- 3
teaspoons canola oil, divide
- 1 tablespoon minced
garlic
- 2 teaspoons minced
ginger
- 1 large bell pepper,
cut into 1/2-by-2-inch strips
Preparation:
1. Whisk the reserved 3 tablespoons pineapple juice,
vinegar, soy sauce, ketchup and sugar in
a small bowl until smooth. Place tofu in a medium bowl; toss with 2 tablespoons
of the sauce. Let marinate for 5 minutes. Add cornstarch
to the remaining sauce and whisk until smooth.
2. Heat 2 teaspoons oil in a large
nonstick skillet over medium-high
heat. Transfer
the tofu to the
skillet using
a slotted spoon. Whisk any
remaining marinade into the bowl of sauce.
Cook the tofu,
stirring every
1 to 2 minutes,
until golden brown, 7 to 9
minutes total. Transfer the tofu to a
plate.
3. Add the remaining 1 teaspoon
oil to the skillet and heat
over medium
heat.
Add garlic
and ginger
and cook,
stirring constantly, until
fragrant, about 30 seconds. Add bell pepper
and cook, stirring
often,
until
just tender, 2 to 3 minutes.
Pour in the sauce and cook,
stirring, until
thickened, about 30 seconds.
Add
the tofu and pineapple chunks
(or tidbits)
and cook,
stirring
gently,
until heated through, about
2 minutes more.
• Make Ahead Tip: The tofu can
marinate (Step 1) for up to 30 minutes.
