Spring into Action
Spring cleaning, spring fever and spring everything. What
an exciting time of year for fresh new beginnings. Some
of the seeds we have planted in building a healthy life
are starting to pop up and others just need a little more
time.

Spring seems to translate to
activity and getting back outside and taking time to
smell the flowers. Most of you
know I am a huge bird fan and I had the best Spring gift
ever this morning. While out filling the bird feeders a
Finch came and landed on a bush very near me, maybe two
feet away. They normally don’t come anywhere near
us when we are out there. Today however, he was watching
me pour Sunflower Seeds and flew over and landed on my
back. Yes, it’s true and I was speechless. It is
one of those things I always imagine happening and yet
never really believed it would.
For years, I did not believe I could build a healthy life
either and now I am doing it. As of today I am down a total
of 53.9 pounds! Still have a long way to go and yet was
still excited to see my percentage move from 28% to 29%
completed.
I am giving myself a ‘spring into action’ goal
for the next three months. Between now and June 21st (first
day of summer) I have set an intention to release another
15 pounds bringing my total to about 65 pounds. I have
been making steady progress and just wanted to step it
up a little.

Spelt

One of the few foods in tier one not related to spinach,
spelt is instead a grain related to wheat, but with a nuttier,
sweeter flavor. It also tends to be much more nutritious.
Yes, it does contain gluten, so if you have a serious condition,
you might want to bump it off your personal tier one, but
many people with wheat allergies or intolerance are fine
with spelt.
The nutrition
facts:
Half a cup of cooked spelt is 123 calories, 1 gram of fat,
25 grams of carbs, 6 grams of protein (far more than
wheat), and 4 grams of fiber.
You'll find a handsome 13 percent of your recommended
daily allowance (RDA)* for niacin, as well as some vitamin
E, riboflavin, thiamin, vitamin B6, and folate. The mineral
side of things is much more impressive, with 12 percent
of the RDA for magnesium, 15 percent for phosphorus, 11
percent for copper, and 56 percent for manganese. You'll
also find calcium, iron, potassium, zinc, and selenium.
Spelt is the poster child for whole grains as a viable
source of carbohydrates. It has minerals and protein you
won't find in fruits and veggies. Also, spelt and other
whole grains contain their own unique set of phytonutrients,
which early research indicates can take on issues such
as cancer and heart disease.
How do you eat this stuff?
Spelt works exactly like wheat, so if you're a baker, cut
your flour with spelt flour or replace it entirely. If
you're not a baker, there are plenty of great commercial
breads and pastas out there for all your "spelty" desires.

The
Ingredients of Shakeology:
Flaxseed
What is flaxseed? Flaxseed is the seed of the flax
plant, which is believed to have originated in
Egypt. It
grows
throughout
Canada and the northwestern United States.
Flaxseed oil comes from flaxseeds. Common Names—flaxseed, linseed
Latin Names—Linum usitatissimum
Flaxseed was cultivated in Babylon as early as 3000 BC, according to the Flax
Council of Canada. By the 8th century, King Charlemagne believed so strongly
in the health benefits of flaxseed he passed laws requiring his subjects to consume
it. Fast-forward 13 centuries and some experts would say we have preliminary
research to back up what Charlemagne suspected all those years ago.
Although flaxseed contains all sorts of healthy components, it owes its healthy
reputation primarily to three ingredients:
• Omega-3 essential fatty acids, "good" fats that have been shown
to have heart-healthy effects. Each tablespoon of ground flaxseed contains
about 1.8 grams of plant omega-3s.
• Lignans, which have both, plant estrogen and antioxidant qualities. Flaxseed
contains 75- 800 times more lignans than other plant foods
• Fiber. Flaxseed contains both the soluble and insoluble types.
What are the benefits of flaxseed?
Benefits of flax seed as shown in many studies include lowering total
cholesterol and LDL cholesterol (the bad cholesterol) levels. Other benefits
show that flax
seed may also help lower blood triglycerides and blood pressure. It may
also keep platelets from becoming sticky therefore reducing the risk
of a heart attack
Recent studies also showed positive benefits of flax seed oil in Crohn’s
Disease and Colitis. Flax seed oil seems to be able to heal the inner
lining of the inflamed intestines.
Some call it one of the most powerful plant foods on the planet. There’s
some evidence it can help reduce your risk of heart disease, cancer, stroke,
and diabetes. That’s quite a tall order for a tiny seed that’s
been around for centuries: flaxseed.

Blueberry & Spice
Spelt Pancakes

Ingredients:
1 1/2 cups plain white spelt flour
1/2 cup brown rice flour
2 teaspoons baking powder
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/3 cup sugar
2 eggs, lightly beaten
2oz coconut oil
1/2 cup rice milk*
6 1/2oz blueberries
Pure maple syrup, to serve
* Replace the rice milk with soy milk, if you prefer.
This will also lower the GI of the dish.

Method:
- Sift the flours,
baking powder and spices into a bowl. Stir in the sugar
and make a well in the center.
- Whisk together the
eggs, coconut oil and melted butter and milk and pour
into
the dry ingredients. Whisk
until the batter is smooth.
- Lightly oil a non-stick
fry pan and heat over low-medium heat. Pour 2 tablespoons
of the batter into the
pan and cook until bubbles appear on the surface.
Flip the pancake
over and cook the other side until golden.
Keep warm while you cook the remaining batter.
- Serve
the pancakes topped with the blueberries
and maple syrup. Makes 12 pancakes.
